Huehuetenango, Guatemala, is home to the Todosantarita Cooperative, a group of dedicated farmers cultivating coffee on the stunning hills of the Sierra de los Cuchumatanes, Central America’s highest non-volcanic mountain range. Named after the “All Saints” festival, an annual November 1st celebration marked by a spirited horse race, Todosantarita has deep roots in the traditions of this unique region.

The cooperative began in 1986 when a small group of 17 farmers came together, later formally establishing Todosantarita with the support of Fedecocagua. Today, it has grown to include 131 members who are as dedicated to quality coffee as they are to the community’s progress. Their work has led to infrastructure improvements, such as roads, a school, library, clinic, and enhanced access to drinking water, all benefiting their families and future generations.

This coffee’s journey begins at the farm level, where ripe cherries are picked and wet-processed before delivery to the cooperative's dry mill. Here, they undergo cupping, grading, and hulling, ensuring that only the finest beans move forward. For decaffeination it’s gently soaked in a process that removes 99.9% of caffeine while preserving its vibrant flavour profile.

With caramelised citrus notes and a bright lime finish, this coffee reflects the expertise of the cooperative’s members and the rich heritage of Huehuetenango. Despite challenges such as rising fertilizer costs and labor shortages, Todosantarita continues to thrive, balancing traditional methods with modern-day demands. This exceptional decaf coffee is a testament to their resilience and commitment to excellence.
